A Saturday of Cooking, Catching Up & Cosy Things
Saturday started exactly how I wanted it to: slowly.
No alarm, nowhere to rush to, just breakfast at home and a little extra time to actually enjoy making it. Scrambled eggs, egg white omelette with sesame seeds, coffee with protein milk, toast— the kind of breakfast that makes a weekend morning feel like a weekend morning. I use plates that can go in the oven, that means that I can put them on top of the induction hob while I cook. This way they are nice and hot and bearkfast will stay warm longer.
Breakfast was eggs, toast, coffee and water — with my shopping analysis open beside me.
I’ve been keeping track of what we’re actually buying and spending at the supermarket, which has turned into a slightly bigger project than originally intended.
Blue was, of course, fully committed to the cosy Saturday agenda too. Wrapped in a blanket and looking like she had absolutely no intention of being productive. I respect it.
Then it was time to cook
A big batch of chicken for the next few days.
Not particularly glamorous, but this is probably the most realistic picture of how I make eating well easier during busy weeks: cook plenty at once, put it in the fridge, and make future Jo and Pedro’s life easier.
Today’s batch was sweet and sour chicken — and there was a LOT of it.
And something sweet
Protein dessert: light gelatin, protein vanilla yoghurt topped with raspberries, and a Bergen sky that decided to show off a little.
Toasted sandwich with guacamole and a creamy dip on the side was dinner. For the dip I used the light kesam with avocado seasoning.
Simple, quick and exactly what I wanted after spending enough time in the kitchen already.
